Healthy Tuna Casserole

I created a “heatherized” healthier version of tuna casserole, since it’s one of my favorites but I’m dairy-free/gluten-free. It satisfies that comfort home cooked meal that we all crave during colder weather but with less calories and fat. Here it is:

Heather’s Tuna Casserole:

3 packages pre-cooked brown rice or 2 Cups uncooked brown rice

1.5 Cups vegetable stock broth

4 cans of white albacore tuna (drained)

1/4 white onion, diced

2 cloves garlic, pressed

1 tsp sea salt

2 Cups raw spinach

1 Cups vegan cheese shreds or Nutritional Yeast

1 Cups crispy fried onion strings

Brown the onion and garlic together in a saucepan over medium heat. Then, in a medium size saucepan, combine brown rice, veggie broth, tuna, spinach, onion, garlic and sea salt and sautee for 5 minutes on medium heat. Add in vegan cheese or nutritional yeast and sautee for an additional minute. Pour into a 9 x 9 casserole dish. Sprinkle top with crispy fried onion strings and bake at 350 degrees for 15 minutes. Serves 4.
