I had to come up with my own version of pesto since I am dairy free. I’m not a measurements person so I will try my best to guide this recipe, which is very simple. Use a food processor to make the pesto.
– 1 Small Avocado or 1/2 Large Avocado
– 2 Garlic cloves & 1/4 white onion chopped (I like to sautee it a little first so it’s not so pungent)
– 1 large handful of Spinach and 1 small handful of fresh Basil
– 1/4 Cup Pine Nuts
– Sea Salt and Lemon Juice to taste & add olive oil to get the right consistency
