Mediterranean Orzo Recipe ( Vegan )

1 package of orzo (I use gluten free)

2 ripe tomatoes, diced

3 full stalks of bok choy, cut up

2 links of vegan italian sausage (fieldroast brand), cut up – do not use if you are gluten-free

1/4 Cup kalamata olives, chopped with a food processor if possible

1/4 white onion, diced

4 cloves of garlic, pressed

1 tsp of sea salt

3 TBL of kalamata olive juice

Once you have cooked the orzo in a quart of water per package instructions, drain and add back into the pot. Throw in the other ingredients and saute until hot. You can sweat the onions and garlic first if you choose but it’s not required. Top with fresh grated lemon zest and drizzle with extra virgin olive oil!
