Vegan/Gluten-Free Mexican Fun Bowl Recipe


I created a new dish that really excited me because it came out so incredibly tasty! It’s balanced nutritionally, flavorful and vegan/gluten-free but has the option of adding chicken, which I’ve also done before.

Shopping List:
-Brown Rice (pre-cooked is fine) 3 packages or 2.5 Cups dry
-Organic Canned Black Beans 15oz.
-Organic Tomatoes 1-2 diced
-Avocado 3 large
-Trader Joes “Cowboy Salsa” 1 Jar ( if no TJ’s nearby, add salsa and corn)
-Onion powder, Garlic powder, Sea Salt, Chili powder
-Lime Juice
-Chicken shredded (optional)
Directions (cook time 10 minutes)

Create your guacamole in a small bowl using 2 avocados, onion powder, garlic powder, sea salt and lime juice (all to taste). Set aside. In a large saucepan/wok add brown rice, black beans (rinsed & drained), chopped tomatoes, Cowboy Salsa, chili powder & simmer with a little olive oil. Once flavors are combined serve with guacamole added on top of the dish. Viola! Dinner’s ready! Serves 4.
