I have been trying to find time to create a new pumpkin pasta sauce but instead decided to create a pumpkin soup recipe! I don’t know about you but I LOVE soup…. especially in the colder months. I hope you try it out and enjoy it!
1 Can organic pumpkin puree
1/4 white onion chopped
1 clove garlic, pressed
1 TBL maple syrup (can adjust to taste)
1/4 Cup Lite coconut milk from a can
Directions: Put everything into a pot on medium heat and simmer for 10 minutes. Garnish with anything you like! I like crushed pistacios.
