Plantbased Buddha Bowl

Wow, this year is flying by! It’s almost June! I have been really thinking about this website and what I want to do with it, which is why I have not been posting regularly on the blog. I plan to start writing again, which brings me joy. I have missed writing and connecting with people through this website and can’t wait to start again.

I made a yummy dinner tonight and wanted to share the recipe. I hope you enjoy it!

You know if it’s a weeknight, it’s got to be fast and easy or I won’t make it. As a single mama….I just don’t have time.

Ingredients: sweet potatoes, corn, zucchini, quinoa, avocado.

Directions: make all 3 items at the same time. Sauté zucchini and corn in a little bit of veggie broth with onion powder and sea salt until zucchini is tender. Bake sweet potatoes in the oven until soft. Make your quinoa. Throw it all together. Simple.
